Ingredients of Chorizo Soup
- You need 8 oz of dried chickpeas.
- Prepare 1 tsp of olive oil.
- Prepare 4 1/2 of chorizo.
- Prepare 3 clove of garlic.
- You need 2 tsp of ground corriander.
- Prepare 1 of salt.
- Prepare 1 of pepper.
- You need 1 of extra virgin olive oil.
- It's 1 of toasted flake almonds.
Chorizo Soup step by step
- Soak chickpeas in water overnight. Drain & rinse when ready to cook..
- Chop chorizo into small chunks & heat in oil until just beginning to crisp..
- Add chickpeas & cook for 3 mins..
- Add garlic, onion & coriander then cover with water by 25mm. Bring to the boil then simmer for 2 hours. Keep checking & make sure chickpeas are always covered, adding more water if needed..
- Remove the onion & season to taste with salt/pepper..
- Spoon half the chickpeas into a blender & blend smooth, adding more water if needed..
- Add blended chickpeas back to the pan & reheat. Then serve with flaked almonds and a swirl of olive oil..
