  5. Prepare 1 teaspoon of dried Oregano.
  6. Prepare 1 of Finely chopped Onion.
  7. It's 4 of Finely chopped garlic cloves.
  8. You need 1.5 tablespoons of sugar.
  9. You need of Small tub of Mascarpone.
  10. You need of Freshly grated Parmesan for garnish.
  11. You need of Fresh torn Basil leaves (optional garnish).

I came across this recipe and was sold…hands down. Cook the pasta according to the directions on the package, so it will be ready in time for the sauce. If desired, use a blender or hand-blender to puree the sauce, otherwise it can be left chunky. Beautifully simple, quick, and scrumptious pasta dish, bold flavours, easy on the wallet.

  1. Boil 500g of Penne pasta in salted water..
  2. Whilst the pasta cooks, fry onion and garlic until translucent, in 2 tablespoons of oil, preferably Olive Oil..
  3. Add the sliced Chorizo and gently fry for 3 minutes and until the oil turns orange in colour..
  4. Stir in a 440g of good quality chopped, tinned tomatoes. Also add the dried herbs and sugar..
  5. Allow the sauce to simmer gently for 5 minutes before adding 3 dessert spoons of mascarpone and a handful of grated Parmesan. Simmer for a further 5 minutes till the sauce reduces a little..
  6. Drain your pasta well then add to the sauce mixing well till all pasta is submerged and coated in sauce..
  7. Serve with fresh crusty bread and butter. And enjoy!.
