- Prepare 12 slice of thin cut bacon.
- You need 4 large of eggs.
- It's 4 slice of thin cut ham.
- It's 3 tbsp of milk.
- Prepare 1 tbsp of bacon grease.
- Prepare 1/2 cup of shredded cheddar cheese.
- Prepare 3 dash of ground black pepper.
- You need 1 of anything else u would like to put in your scrambled eggs... chorizo, sausage, onions, green peppers, mushrooms, hot sauce etc...

- to pan fry: large skillet lightly greased...
- to oven cook.. preheat oven to 400°F.
- on a large work surface.. covered in parchment paper.. lay 3 slices bacon side by side so they are just touching each other..
- take one slice of bacon and weave it through the other 3 slices up down up..
- take another slice and weave it so its touching but not overlapping last weave and this time its down up down..
- take another slice and repeat what u did in step 4..
- trim off some excess bacon ( save for later use!).
- to oven cook: place parchment with weave in a cookie sheet and bake about 35-40 minutes or until nice and crispy! flipping halfway through. I do not like this method as the edges tend to burn before the middle is done..
- to pan cook.. gently flip the weave into a hot skillet( u may have to fix or adjust bacon weave) and fry until the first side is crispy. using a large spatula gently and carefully flip it over to crisp up 2nd side. total about 10 minutes per side. depending on how high of heat. I use medium high..
- when done.. transfer bacon to a paper towel to drain. while bacon is still hot fold it in half resting it on something to keep the mouth of the taco open so u can fill it later. I used an oval 1/3c. measuring cup. u can use a handle of a large spoon or whatever..
- repeat with rest of bacon. you will end up with 2 bacon taco shells!.
- fry up bacon u trimmed off the excess and set aside on a paper towel to drain..
- if using green pepper, onion etc. using same pan u fried bacon in drain out bacon grease and reserve for later. sautee veggies in bacon grease until tender and set aside..
- next.. chop or shredd your ham..
- in a bowl wisk together milk, eggs, ham, pepper and any veggies u sssauted and leftover bacon trimmings u cooked up earlier..
- heat same skillet u did veggies in.. add a tbl. of bacon grease and pour egg mix in. keep stirring and cook until scrambled eggs form and eggs are cooked through..
- grab ur bacon taco and fill it with eggs and sprinkle with desired amount of cheese..
